Strawberry Cinnamon Oatmeal Pancakes


5 eggs whites 

1 teaspoon cinnamon

1 teaspoon baking powder

1 teaspoon vanilla extract

20 grams of rolled oats

75 grams of chopped strawberries 


In a medium sized mixing bowl, whisk the egg whites until they become frothy and slightly thickened. 

To the egg whites, add the cinnamon, baking powder, and vanilla extract. Stir until well combined. 

To the mix, gently fold in the oats and let it sit for 3 minutes to absorb any excess moisture. 

Heat a saucepan or skillet over medium heat (optional: lightly grease with cooking spray, butter, or oil). Pour a ladleful of pancake batter onto skillet to form a medium sized pancake. Before flipping, place several pieces of chopped strawberries onto surface of pancake.

Cook until bubbles start to form on surface (around 2-3 minutes) then flip and cook an additional 2-3 minutes or until golden brown. 

Repeat process and enjoy!
